Panfried Garlic Bread with Roast Marinated Peppers & Macroom Buffalo Burrata
Serves 2
Preparation Time: 20 mins (add overnight marinating)/Cooking Time: 10 mins/Total Time: 30 mins +overnight marinade
Ingredients:
3 peppers
1 slice of Sourdough Bread
2 cloves garlic, finely chopped
3 tbsp olive oil, plus extra for drizzle
Bunch of fresh thyme
150g Macroom Buffalo Burrata
Sea Salt and freshly ground Black Pepper
Method:
- Slice 1 Red Pepper & 2 Yellow Peppers 
- Add a Bunch of Thyme, 3 x Garlic Cloves, Sea Salt & A Drizzle of Olive Oil 
- Roast in the Oven at 180˚ for 10 minutes 
- Drizzle over some more Olive Oil and Marinade Overnight 
- Pan Fry 1 slice of Sourdough Bread in a Hot Pan, on Both Sides 
- Take the pieces of Roast, Marinated Garlic and spread on the Toasted Bread 
- Place the Roasted Peppers on top of the Garlic Toast 
- Cut the Macroom Buffalo Burrata in half and place on the peppers. Add some Micro Herbs, Sea Salt, Black Pepper & enjoy!
